Caramelizing the onions can help enhance many dishes, such as your scrambled eggs and salads. Use them in the Fluffy Smoked Salmon & Truffle Scrambled Eggs or the Healthy Salad with Smoked Salmon and Apple.
Just make sure to start caramelizing your onions first when cooking as the process can take from 30 minutes to an hour.
The trick to perfect caramelized onions is to let them cook long enough over medium to medium-low heat. Stir them when they start sticking to the pan, but not too often either, or else they will not brown. You can add a little olive oil or water if you find that the onions are on the verge of burning. I like to add water instead of oil during the cooking process to not overdo the oil and keep it healthier. Only near the end do I add a bit of oil.
If you wish, you can also cook a large batch and freeze them for up to three months.

Ingredients
- 1 onion yellow, white or red
- 1 tsp olive oil
Instructions
Step 1: Cut the onions
- Cut the onions into slices.
Step 2: Caramelize the onions
- In a large pan, heat some olive oil on medium-high heat. You want to use a pan wide enough to prevent the onions from stacking so that they can all caramelize evenly.
- When the oil is shimmering, add the onions and reduce the heat to medium/medium-low.
- Start stirring only when the onions start to turn a bit brown. If they start burning, reduce the heat to medium-low.
- Stir and scrape every few minutes (but avoid doing it too often). The onions will take from 30 minutes to an hour to caramelize. Add a bit of water once in a while if they start burning and sticking to the pan. You may need to add a bit more olive oil as well.
