All in the Healthy Poutine Sauce
The magic of this Healthy Sweet Potato Poutine recipe lies in the healthier poutine sauce and how well it combines with the sweet potato fries. I tried making the recipe using McDonald’s french fries once. However, it didn’t turn out as good as with sweet potato fries. Funny enough, I adapted the sauce used in the Crispy Noodles with Chicken and Seafood (Mì Xào Giòn) to create this recipe. While I did use Asian sauces, the poutine sauce still tastes close to regular poutine sauce, and, in my opinion, is even better.
How the Healthy Sweet Potato Poutine Recipe Was Discovered
I often do freestyle cooking, where I just go with the flow in an attempt to find new tasty combinations. Sometimes, it turns out surprisingly good; other times, it turns out disgusting and I end up throwing out everything. The Healthy Sweet Potato Poutine is an example of an experiment which turned out good. I wanted to make myself a poutine and wondered if there was any possibility of making a healthier version. Then, I thought of the sauce used in the Crispy Noodles with Chicken and Seafood (Mì Xào Giòn); I had a feeling that with a little twist, it could get close to the taste of a poutine sauce. I remember telling Gab about this idea; he seemed a bit skeptical.
When looking at poutine sauce recipes, I noticed that most of them use beef and/or chicken broth (not the bone broth) as main ingredients, along with butter. Having bone broth in my freezer, I decided to use practically the same ingredients as for the Crispy Noodles with Chicken and Seafood (Mì Xào Giòn). The only difference was that I omitted the squid rings and also added butter. After adjusting the ratios a couple of time, we both got surprised by the result! The sauce tasted pretty similar to the usual poutine sauce, while also being made with a healthier broth and with less butter.
The Sweet Potato Fries
We’ve tried making our sweet potatoes in the oven a few times, and they have always came out mushy ;(. We were still unable to get those perfectly crispy sweet potato fries. We’ve recently tried frying our sweet potato fries in our new Philips Airfryer with Turbostar and found that they were much crispier, and this, with just a little bit of olive oil. We use about 2 Tbsp of olive oil for 2 medium-sized sweet potatoes cut into fry-shaped pieces. We’re still experimenting with the seasoning, cooking temperature and duration. Therefore, we’ll update you once we find the optimal recipe and technique for perfect sweet potato fries. They’re far from perfect, but we’re getting there!

Ingredients
For the poutine:
- 4 large sweet potatoes
- 200 g fresh cheese curds ideally made on the same day for that extra squickyness
For the sauce:
- 2 cups chicken bone broth
- 1/3 chicken stock cube I like to use low-sodium ones
- 1 1/2 tsp soy sauce
- 2 tbsp oyster sauce
- 1 tsp mushroom seasoning I use the Po Lo Ku Mushroom Seasoning, which can be found at Asian markets.
- 2 tbsp salted butter adding more butter makes the sauce tastier, but also less healthy, so you could add a bit more if you don’t mind it being this way
- cornstarch or any other thickening flour, mixed with an equal quantity of cold water
Instructions
Step 1: Make the sweet potato fries
- Rinse, peel and cut the sweet potatoes into fries, of about a quarter inch in width.
- Let them sit in a bowl of water for 30 minutes.
- Bake them using your preferred method.
Step 2: Make the healthy poutine sauce
- Combine all the ingredients for the sauce (except for the cornstarch) in a sauce pan over medium-high heat. I recommend you to taste the sauce at this step and adjust the quantities as desired.
- When the sauce starts boiling, slowly whisk in the cornstarch mixed with cold water. Adjust the quantity of thickening flour until the sauce becomes thick like a poutine sauce.
- Remove from the heat when ready.
Step 3: Assemble and Serve
- Time to enjoy your healthier poutine! =)
