The Salmon
While poke bowls normally uses fresh sushi-grade fish, I prefer to use smoked salmon. Smoked salmon is cheaper, easier to get at the grocery and can be conveniently stored in the freezer, as opposed to sushi-grade salmon. What I like to do is buy a big pack of smoked salmon. Before storing the smoked salmon, I separate the whole package into individually-sized zip lock bags. Then, I freeze them. This way, I can easily thaw a single portion afterwards. You only need to thaw smoked salmon in the refrigerator the day before or under cold water in the morning. How convenient!
The Crab Sticks
You can use any type of crab sticks you like. However, I strongly recommend using leg crab sticks; they are tastier (they taste less fake) and more tender than standard crab sticks. So far, I have seen them in a couple of Asian groceries; it shouldn’t be difficult for you to find some.
For this poke bowl recipe, you’ll notice that I only use ingredients that don’t need to be fresh, except for the spring lettuce mix. When I buy too many fresh vegetables, I often end up with some that perish before I actually get a chance to use them.
The Rice Used in Poke Bowls
Poke bowls are always served with jasmine rice. Sure, you could make your poke bowl using another type of rice. Nevertheless, I don’t think the result would be as satisfying. Also, please don’t use instant jasmine rice! Buy the real thing; it will be much tastier and you will thank yourself.
The Poke Bowl Sauce
Of course, poke bowls wouldn’t be as good without the sauce! This poke bowl recipe goes very well with a Teriyaki Sauce. I follow the Simple Teriyaki Sauce recipe by Goat Berry Kitchen, but you could use any other teriyaki sauce recipe or go with a store-bought bottle. Of course, if you’re able to control the quantities yourself, it’s easier to make it healthier than the one you can get off the shelf.

Ingredients
- 75 g smoked salmon
- 5 crabsticks
- 1/3 cup edamames
- 1/3 cup corn kernels
- 1 cup spring lettuce mix
- 1/2 cup jasmine rice
Instructions
- Thaw your smoked salmon and crab sticks following the package instructions.
- Cook the edamames as per the instructions on the package
- Make your rice as per the instructions
- Prepare your corn kernels and lettuce.
- Assemble.
