Sweet, Sour and Savoury

This recipe is very nice for a quick and healthy lunch: it’s easy to make and requires very few ingredients. It combines smoked salmon, apple slices, caramelized onions, pita chips and a homemade Sweet and Sour Salad Dressing. The combination results in a sweet, sour and savoury salad enhanced by the crunch given by the apple slices and pita chips.

I used to think I didn’t like salads. I thought they were too bland. Yet, that was mostly because I never had a satisfying one. However, not so long ago, I had a very savoury salad at the restaurant for the first time. It wasn’t maybe the healthiest one, but salads are usually never this healthy at the restaurant. It’s at that moment that I decided to give salads a second chance. So, if you think you don’t like salads and are looking for a healthy lunch option, I want you to at least give this one a chance. I know that Gab also didn’t imagine he could like a salad this much, but he did!

The Apples

Apples are an easy choice when it comes to salad toppings. I like to use Honeycrisp apples as they are very crunchy and juicy. The downside is that they are more expensive than other kinds of apples, but I think they’re worth it!

I’d like to thanks @spoonfulof.chic for having suggested to try adding Stacy’s Pita Chips Simply Naked Chips to my salads. GENIUS! I’m so addicted to these chips now. And while chips remain chips, these ones are half as fat as most other standard chips brands. It’s not like you’re going to binge on the whole bag for this recipe either =p… Well, I say that… but I always end up eating a couple of extra pita chips after eating my salad because they are so good! I can’t help myself.

I always make my own salad dressing, because the ones you can get from the grocery store are usually not very healthy. For this healthy salad, I use an easy 3-ingredients Sweet and Sour Salad Dressing.

Ingredients

  • 142 g lettuce spring lettuce mix or spinach (one box)
  • 150 g smoked salmon
  • 1 apple preferably Honeycrisp
  • 1 onion caramelized
  • 10 pita chips
  • Sweet and Sour Coconut Salad Dressing

Step 3: Assemble and Serve

  • Make a bowl of lettuce and top it with caramelized onions, smoked salmon, apple slices and pita chips’ crumbles.
  • Pour the Sweet and Sour Coconut Salad Dressing over the salad.
